5 medium tomatoes, diced
3-4 cloves minced garlic
juice from 1/2 lime
1/4 c. extra virgin olive oil
1 c. Parmesan cheese, grated
1 tbs. fresh basil
salt and pepper to taste
In a large bowl, toss all ingredients together and allow to stand for several hours in the refrigerator.
Spoon mixture onto toasted bread, and top with Parmesan cheese. Broil until cheese has melted.
