1/2 med. onion, chopped
1 c. long grain rice
1 tsp. salt, ground pepper
2 tbsp. shortening
1/2 green pepper, chopped
8 oz. tomato sauce
2 c. water
Melt shortening in skillet. Add onion, green pepper and rice and sauté. Add remaining ingredients and bring to a boil. Cover and let simmer until rice is cooked.
