3 eggs
1 1/2 c. flour
2 tbsp. vegetable oil
1/8 tsp. salt
1 1/2 c. skim milk
Makes 24 crepes
In mixing bowl, combine all ingredients and beat by hand until smooth and lump free. if possible, refrigerate for at least 1 hour.
Put 2-3 tablespoons of batter in the bottom of a non stick skillet and flip when bottom is browned.
