Dutch Apple Cake
2 C. sifted flour
3 tsp. Baking powder
2 tbsp. sugar
½ tsp. salt
1 egg well beaten
¾ C. milk
3 tbsp. Shortening
1 tsp. cinnamon
1 tbsp. milk
2 C. apples, sliced
Sift flour with baking powder, sugar, and salt. Cut in ¼ C. shortening until mix is as fine as corn meal. Combine beaten egg and milk and add to flour mixture, mixing until soft dough is formed. Melt 3 tbsp. shortening and butter together add brown sugar, cinnamon, and milk, and mix well. Pour into 8x8 pan greased with shortening. Press apple slices into mix in circles. Spread dough over apples. Bake in 350 degrees oven for 50 to 60 min. serve upside down with whipped cream. Yield is 8 to 10 servings.
