6 large sweet potatoes
1/2 c. Sugar
1 qt. orange juice
2 tbsp. cinnamon
2 tbsp. nutmeg
1/4 tbsp. vanilla
1 stick butter
Boil sweet potatoes, drain and cool. Peel off skins and slice lengthwise.
Place in 2 layers in a casserole dish and sprinkle 1/4 c. sugar on each layer.
Place orange juice, butter, Cinnamon, Nutmeg and vanilla in a 2 qt. sauce pan and heat on medium. Stir until it reaches a soft boil and reduce heat to let simmer for about 5 minutes.
Pour over sweet potatoes.
Cover pan and bake for 50-60 minutes at 350 degrees. Uncover and bake for extra five minutes to brown top.
