1 lb. crabmeat
3 tbsp. all purpose flour
1/4 tsp. baking powder
4 shakes Worcestershire sauce
1 egg
1 tbsp. parsley
1 tbsp. prepared mustard
2 tbsp. mayonnaise
3/4 c. vegetable oil
Place crabmeat in a bowl and add the flour, baking powder, Worcestershire, egg, parsley, mustard and mayonnaise; blending gently.
Pour about 1 inch of oil into a skillet. Heat over medium-high heat. When a drop of water splatters when in contact with the oil, it is hot enough to fry crabcakes.
Form crabcakes into balls and flatten into a patty. Fry until golden brown, about 3 minutes. Turn and fry on other side until brown. Remove crabcakes and drain on paper towels. Repeat until all the crabmeat is used.
